Fall Foodie Inspiration

Here's a few foodie ideas I wanted to share from the last few weeks. Happy Fall!
Mom's cupcakes for Halloween. See the little skeleton peeking out in the back? ;)
My attempt at making a pumpkin spice latte.
Vegetarian Chili!
Ashley's Fall Veggie Chili Recipe:

1 can each of black beans, kidney beans and chick peas
4 diced tomatoes
1 can tomato paste
2 cups vegetable broth
1 diced onion
salt, pepper, chili seasoning to taste
grated cheese

1. Soften diced onions in a little olive oil.
Add vegetable broth and 1 can tomato paste.

2. Let 'sauce' thicken then add diced tomatoes.

3. Add beans and seasoning.

4. Stir well and let simmer at least 45 minutes on low.
Add water as needed during cooking

5. Serve with grated cheese!

*The trick to this recipe is using your taste buds along the way.
A tomato base is very important. If you have extra sauce
in the fridge add it in! Another great addition would
be red or green diced peppers.

Dear Reachers, I hope you've enjoyed this recipe!

More Meatless Madness

As my month of vegetarianism comes to an end...
I wanted to share some of the highlights from my week:

Here's my own version of Panera Bread's Mediterranean Veggie Sandwich. Add pesto to one slice of bread and tomato hummus to the other. Fill your sandwich with cut cucumbers, sliced onions, lettuce, tomatoes and feta cheese... Very, very yummy!

Toast Italian bread for five minutes with a dash of olive oil in the center and some fresh rosemary. Very delicious!

My honey made these Austrian delights this week. I call them 'potato pillows'. You eat them with sauerkraut and the combo is delicious!

In other news, voting is now open for Martha Stewart's American Made Event this October. If you have a moment, please vote for Lady Lucas.
It would mean a lot to me!!

Veggie Love

It is now a little past the two week mark of eating 'meatless' and I'm still enjoying it! Here are some little highlights below:

French Toast Roll Take a stale kaiser roll and
dip it in an egg & milk mixture. Add a little vanilla and cinnamon,
then cook in a fry pan with butter!
Fresh Basil from the Neighbors! We were lucky
to get this huge bunch of basil {and rosemary in the back} from our
neighbors this week. Now there's a huge jar of pesto in the fridge.

Handmade Meatless Lasagna! I lived on this lasagna this week ;)
I made it with lasagna pasta sheets, fresh sauce with mushrooms, ricotta and mozzarella. A little basil on top too!
Brie &  Pears with a Little Honey :)
Amazing. And no carbs if you care about that stuff...!

A Meatless Month

I have wanted to commit to being a vegetarian for as long as I can remember, and after gradually cutting down on meat for the last year, I have finally chosen the month of August to be completely meat free! I don't know if it's in my head, but I honestly feel happier after only six days. I was also inspired to hear my cousin became a vegetarian this spring... only more incentive. Here are some highlights from my first week as a veg girl.

Homemade Bread
A Loaf of Karl's Bread
I started the week with an amazing loaf of homemade bread featuring sunflower seeds by my friend Karl.
Potato Salad
Potato Salad in a bowl made by Mari ;)
A side of this yummy potato salad makes everything better! To make your own, boil five or six small red potatoes and let cool. Dice them up with the skin on, and toss with white vinegar, spicy mustard, olive oil, dill and salt and pepper.

Vegetarian Sandwich
Yummy Veggie Sandwich
I honestly forgot all about cold cuts, after trying this sandwich Sunday night! Simply toss half a sliced avocado with a little olive oil and salt and pepper and add to a toasted bagel with lettuce, sliced onion and spicy red pepper hummus spread. Delicious!!!
