Ashley's Fall Veggie Chili Recipe:
1 can each of black beans, kidney beans and chick peas
4 diced tomatoes
1 can tomato paste
2 cups vegetable broth
1 diced onion
salt, pepper, chili seasoning to taste
grated cheese
1. Soften diced onions in a little olive oil.
Add vegetable broth and 1 can tomato paste.
2. Let 'sauce' thicken then add diced tomatoes.
3. Add beans and seasoning.
4. Stir well and let simmer at least 45 minutes on low.
Add water as needed during cooking
5. Serve with grated cheese!
*The trick to this recipe is using your taste buds along the way.
A tomato base is very important. If you have extra sauce
in the fridge add it in! Another great addition would
be red or green diced peppers.
