Veggie Love

It is now a little past the two week mark of eating 'meatless' and I'm still enjoying it! Here are some little highlights below: 

French Toast Roll Take a stale kaiser roll and
dip it in an egg & milk mixture. Add a little vanilla and cinnamon,
then cook in a fry pan with butter!
Fresh Basil from the Neighbors! We were lucky
 to get this huge bunch of basil {and rosemary in the back} from our
neighbors this week. Now there's a huge jar of pesto in the fridge.

Handmade Meatless Lasagna! I lived on this lasagna this week ;)
I made it with lasagna pasta sheets, fresh sauce with mushrooms, ricotta and mozzarella. A little basil on top too!
Brie &  Pears with a Little Honey :)
Amazing. And no carbs if you care about that stuff...!
